HAPPY  NEW  YEAR TO ALL THE VIEWERS

CHOCOLATE MOUSSE CAKE specially for the first day of new year

INGREDIENTS :-

FOR CAKE :-

1 cup all purpose flour 1 cup sugar (powdered) 1/2 cup cocoa powder 1 tsp baking powder 1 tsp baking soda
2 tbsp oil 1/2 cup milk 1/2 cup curd
METHOD :-
mix all purpose flour, sugar ,cocoa powder , baking powder and baking soda in a mixer grinder
in one bowl mix all the ingredients that is oil,milk and curd well then add the above mixture firmly and bake it on 180 degree in a preheated oven for 30 to 35 min

FOR CHOCOLATE MOUSSE :--

1 cup dark chocolate ( i use morde dark chocolate )
1 cup butter
1 cup whipped cream ( becomes 2 cups after whipping )
METHOD :-
Melt the dark chocolate and butter using the double boiler method
I HAVE MENTIONED THE PROCEDURE OF DOUBLE BOILER IN MY DARK CHOCOLATE MOUSSE RECIPE
After the dark chocolate is melt let it cool down for 15 to 20 min then add the whipped cream and mix it gently ( use cut and fold method )
PLACING :-
Place the cake at the bottom of the container ( the container should be of cheese cake )
Then pour the chocolate mousse mixture on top
Keep it in refrigerator for 4 to 5 hours
Take it out and do the decoration according to ur imagination

PITA  POCKET OR  PITA BREAD

Home made whole wheat pita bread, pockets filled with fresh veggies and no oil patties
Its absolutely guilt free


INGREDIENTS :-

FOR PITA BREAD

4 1/2 cups whole wheat flour
3/4 tbsp dry active yeast
1 tsp sugar
1 tbsp salt
2 tbsp oiL
1/2 cup warm water

METHOD :-

Take luke warm water add yeast and sugar in it , let it rest for 10 minutes till it froth
Take flour ,mix oil and salt in it ,make a whole in the center and add the yeast mixture
Mix the mixture well in the flour
Now knead a dough with water required
Greece the dough with oil and let it rest for 1 and half hours
The dough will become double and fluffy
After taking out the dough knead it well on the flat surface
Take a portion and roll it long so that it should be 5 inches long and 1/2 inches thick
Take a non stick pan place the roll bread cook from one side for 2 min and another side for 2 min
When the bread is cool down make it half
U will see the pockets inside

U CAN BAKE THE PITA BREDA TOO

PITA BREAD STUFFING

INGREDIENTS :-

PATTIES :-
2 cup boiled chick peas
1 cup beetroot grated
3 boiled potatoes mashed
1 cup bread crumbs
1 tbsp red chilly powder
1/2 tsp dry mango powder
salt
2 tbsp fresh coriander

Mash all the ingredients and make a flat patties on a non stick pan
No oil in it  ( IF U WANT U CAN ADD OIL )

For stuffing :-

Cabbage ( long finely chopped )
Carrot     ( long finely chopped )
U CAN ADD ANY VEGGIES U LIKE IN IT
Mayonnaise

Take a pan
Add 1 tsp butter
Put it all the veggies and saute for a minute or two

Take half of the pita bread
Spread the mayonnaise inside
Put the patties inside and fill it with veggies around


This is the whole meal and can be taken in brunch

STUFFED GREEN CHILLIES

INGREDIENTS :-

8 TO 10 thick green chillies
2 potatoes boiled and mashed
1 cup paneer ( cottage cheese ) grated
1 tsp cumin seeds
1 tsp sesame seeds
1 tsp turmeric
1 tbsp red chilly powder ( depends according to your taste )
1 tsp dry mango powder
1 tsp kasuri methi
1 tbsp fresh coriander
salt


FOR GRAM FLOUR BATTER

2 cups gram flour
1 tsp turmeric powder
1 tsp red chilly powder
1 tsp lemon juice
1 tsp soda bicarbonate
salt

METHOD :-

Wash the green chillies well and make a slit on them
Take out the seeds slowly from inside
Warm 2 cups of water and put the green chillies into it for 10 to 15 min
Take a frying pan add 2 tbsp oil in it
Put  cumin seeds , sesame seeds , turmeric powder ,red chilly powder and dry mango powder
Add mashed potatoes and grated paneer into it
Add salt and mix well as all the masala and mashed well into potatoes
Lastly add fresh coriander


Batter :-

Take gram flour add all the spices except lemon juice and soda
Add water and make a thick consistency
Take soda in a spoon add lemon juice into it
Quickly add lemon and soda mixture into the batter


Fill the mixture into green chillies and dip it in the batter and fry it in the oil

Serve with chutney or sauce

VANILLA  CUP  CAKES  WITH  HOT  CHOCOLATE  SAUCE


A lovable treat for kids on this christmas


INGREDIENTS :-

1     cup flour
3/4  cup powdered sugar
1/2  tsp baking powder
1/4  tsp baking soda
1/4  tsp salt
1/2  cup butter ( white )
1     cup milk
1/2  cup milk powder
1     tbsp lemon juice
1/2  tsp vanilla essence


METHOD :-

Sieve flour, baking powder, baking soda in a vessel
I generally give a blend to these three
Take another vessel put in it all the ingredients left over and blend it for around 5 to 6 min
Mix the flour mix with the blended mixture
Preheat the oven at 180 degree for 10 min
Place cup cake covers in a cup cakes mould
Fill the cup cake cover with 3/4 of the batter
Bake it for 20 min



HOT CHOCOLATE SAUCE :-

1/2  cup sugar
1 tbsp flour
3 tbsp cocoa powder
1 cup milk
1 tbsp butter
1/2 tsp vanilla essence


METHOD :-

Heat milk ,butter and vanilla essence in pan
When the butter melts then add flour ,sugar and cocoa powder
Cook it on medium flame for 5 to 6 min

Pour the hot chocolate sauce on the cup cakes

NUTRELLA SPREAD SWISS ROLL


INGREDIENTS :-


3/4 cup all purpose flour 
1/2 cup sugar ( powdered )
1/2 cup milk  powder 
1/4 cup butter 
1/2 tsp baking powder 
2 tbsp cocoa powder 
1/2 cup milk ( depends on the consistency of cake batter )
1 tsp vanilla essence 
3 to 4 tbsp nutrella spread 

METHOD :-

Mix well or sieve all purpose flour baking powder and cocoa powder 
Using a hand blender mix sugar , milk powder,vanilla essence  , white butter and half (1/4) of milk 
When mixed properly add the all purpose mixture to it 
Again blend it properly if its too thick add the rest of the milk 

FOR DOTS :-

Take butter butter place it on a baking dish 
Greece the butter paper 
Now take a small portion of batter and add any colour in it 
Place small dots of that batter on the greeced tray 
Set in in refrigerator for 15 min 
After 15 min slowly pour the batter on the dots 
Preheat the oven on 180 degree and bake the cake for 15 min
After 15 min take the cake out and fastly apply the nutrella spread and roll it slowly 
After rolling pack it in the butter paper and keep in refrigerator until set 
 
pl.note:-
the process of spreading the nutrella and rolling the cake should be done when the cake is hot 
if the cake cools down it will not roll properly

AMLA CANDY

I don't need any explanation for amla because we all know how beneficial it is for all of us to eat


INGREDIENTS :-

1 kg amla
1 kg sugar
1 tbsp black salt
1/2 tbsp salt
2 tsp zeera ( cumin ) powder

Method :-

Boil the amla by giving it 1 whistle or 2
Apart its portion
Take a glass bowl ( if not take a steel one ) and place the amla in it
Place the sugar on the top of it and all the salt and black salt
Keep it in sunlight for around 3 to 4 days
After 4 days strain the amla from the sugar syrup, and again keep these candies in sunlight for 2 days or more
Store in jar by sprinkling cumin powder on top
U can avoid cumin powder if u don't like it
U can use the left over syrup as Amla Sharbat or in making another set of candies

Please note :-
Amla candy is best in colour only in sunlight
It becomes black in colour if u strain them on a cloudy day




LEHSUNI   LACCHA   PARATHA 

Garlic flaovour is my fav and also my family loves it 
the aroma of garlic builds up my temptation 

INGREDIENTS :-

2 cup wheat flour 
3 to 4 tbsp crushed garlic 
salt 
ghee 

METHOD :-

Take 2 tbsp of ghee in that mix crushed garlic 
Make a soft dough of wheat with salt in it 
Take a par of kneaded flour ( as we take for paratha ) 
Roll it big , then apply ghee which is mixed with garlic 
Fold it as shown in the pic and roll as shown in the pic 
Then again roll it with light hands 
Put on non stick pan and cook it as paratha 
Serve with butter 
For more taste i added kasuri methi but its optional

CHENNA  RABRI

Easy and simple rabri and very tasty to
A perfect use of spare milk and paneer


INGREDIENTS :-

FOR RABRI :-

1 Liter milk
1/2 cup sugar
8 to 10 strands of kesar ( dissolved in 2 tbsp of milk )

FOR CHENNA :-

1/2 Liter milk
2 tbsp lemon juice
1/2 cup water

METHOD :-

Make chenna from the above mentioned ingredients and wash it in running water as the smell and taste of lemon disappears
Strain it in a strainer and keep it aside till 10 min
Grate the chenna and keep aside
Boil 1 liter of  milk and till it becomes 1/2
Put the kesar strands dissolve in 2 tbsp of milk
Add sugar in it and stir continuously till the sugar melts
Put the grated chenna in it and simmer it and keep it till 5 to 6 min, in this way chenna will mix in the rabri firmly
Garnish it with pista and kesar strands

My mom special recipe which i love a lot and was and is one of my favourite
It will be a great honour for me to add my mom's recipe in my blog and giving it a new name 

A mixture of all the veggies with my mom's superhit recipe RIYA,S  FOOD JUNCTION SPECIAL  


INGREDIENTS :-

1 cup cauliflower 
3/4 cup french beans 
3/4 cup green peas 
3/4  cup carrot 
3/4 cup potatoes 
3/4 cup green bell pepper 
1 cup paneer ( cut into short cubes )

All the veggies should be finely chopped 

4 to 5 tomatoes ( puree)
1/2 cashew soaked in milk for 1/2 an hour 
1 tbsp kasuri methi 
1  1/2 tbsp red chilly powder 
1/2 tsp garam masala 
1 tbsp ginger garlic paste 
1/2 tsp green chilly paste 
1/2 cup fresh cream ( malai)
salt 

METHOD :-

Par boil the veggies ( put the veegies in warm water and boil it till they are 1/2 cooked )
 Don't boil the bell pepper and cottage cheese ( paneer ) 
Grind the cashew into fine paste 
Take 1 tbsp oil in a pan put all the veggies along with bell pepper and cottage cheese 
Saute for a minute , put 1/2 tbsp red chilly powder and salt and saute for another 2 min or till the water is completely soaked 
Keep the sauted veggies in side 
Now take a pan and put 2 tbsp of oil 
Put ginger ,garlic and green chilly paste 
Saute for a minute and then add tomato puree 
Put red chilly powder ( remaining ) and garam masala and add salt  
When the mixture starts leaving oil add cashew paste 
Stir for 5 minute then add all the saute veggies in it 
Mix it well  and add kasuri methi and fresh cream in the end
If the consistency is thick at 1 cup water in it and simmer for 5 to 7 min 
Garnish with fried onions 
Sreve with roti or naan

DARK CHOCOLATE MOUSSE

Dark chocolate mousse with coffee flour mixed with M&M  banana flavour
Kids jst loved this
Preparation time jst 15 min and setting time 2 hours
No gelatin or agar agar

INGREDIENTS :-

1 cup dark chocolate
1/4 cup m& m ( if u dont have u can replace by chocochips or gems )
3/4  cup fresh cream
2 tbsp honey
3 to 4 tbsp milk
1/4 tsp coffee powder

METHOD :-

Take a double boiler that means a pan half filled with water and in that pan place another small pan with dark chocolate
Add honey and coffee powder mixed in milk in it
Stir continuously till the chocolate is completely melt
Keep aside for 10 to 15 min
Take fresh cream in a cold pan ( empty pan kept in refrigerator for half an hour )
Whip it till it becomes smooth
Don't over whip
Then add the chocolate mixture in the cream
Mix M&M  in the mixture
Pour in glass and keep it in refrigerator for 3 hours

INSTANT  CARROT CHUTNEY

An instant chutney when u have want to eat something chatpata

INGREDIENTS :-

1 carrot grated
1 tsp oil
1/4 tsp mustard seeds
1 tsp red chilly powder
1 tsp lemon juice
salt

METHOD :-
 Take oil in non stick pan put mustard seeds
When the seeds began to crackle add carrot in it
Then add red chilly powder and salt
Take it off from  the gas do not overcook
Lastly add lemon juice

HASH   BROWN  POTATOES 

A perfect breakfast for the family and loved be kids a lot 

INGREDIENTS :-

2 potatoes grated ( the grater should be thick one )
2 tbsp rice flour 
2 tbsp cornflour 
1/4 tsp oregano 
1/4 tsp chilly flakes 
1/4 tsp black pepper powder 
Butter 
1 tbsp parsley ( if not available u can add fresh coriander also )

METHOD :-

Grate the potatoes and squeeze it properly 
Take a non stick pan 
Put 1 tsp butter and put the grated potatoes in it and cook till it is half cooked 
Take it off in a bowl and let it cool for 15 min
Now put all the rest of the ingredients and mix properly 
Roll it with a rolling pin on a flat surface 
Keep the thickness about 1 inch and cut in square or round shape 
 In a nonstick pan shallow fry with 1 tbsp of butter 
Serve with fresh orange juice

CHAKLI

Very essential to be made at our home
First time with 2 recipes

INGREDIENTS :-

2 cup rice flour
1  cup daaliya ( roasted chana dal )
1 tbsp ajwain
2 tbsp red chilly powder
4 tbsp white butter
salt

Mix all the ingredients except butter
Heat the butter on low gas
When the butter is fully dissolved put it in the flour mixture and knead a soft dough
Put it on chakli maker and make soft and crunchy chakli



INGREDIENTS :-

1 cup jowar ka aatta
1 cup maida ( all purpose flour )
1/2 cup malai
1 tbsp ginger garlic paste
1 tsp turmeric
1 tbsp ajwain

Mix all the ingredients and knead a soft dough
Let it rest for 5 min
Put it in chakli maker and make soft chakli

PANEER BUTTER MASALA

A popular and rich delicious paneer gravy loved by all . I knw its rich bt kabhi kabhi chalta hai


INGREDIENTS :-

250 gm paneer ( cottage cheese )
2 onions
10 to 12 garlic pods
1/2 inch ginger
2 green chillies
8 to 10 cashew ( kaju ) ......( soaked in milk and grind into paste )
3 tomatoes ( blanched and grind in puree )
1 tsp red chilly powder
1 tsp coriander powder
1/2 tsp garam masala powder
1 tsp kasuri methi ( dry )
1/4 cup fresh cream
a small piece of cinnamon
salt to taste


METHOD :-

Grind the onions,garlic,ginger and green chillies into fine paste
Take a pan add oil and then add cinnamon and onion paste
When onion turns golden brown add cashew nut paste
Saute for 2 min and then add red chilly powder
Again saute for 2 min
Then add tomato puree
Then add coriander powder and garam masala powder
Let it cook for 5 min till the oil leaves it pan
Then add kasuri methi and salt
Then add warm water about 1 cup
Lastly add paneer cubes and cream
Simmer gas for 5 min
Garnish with fresh coriander and cream


Note :- blanched tomato means boil the tomatoes for a min in water and remove the skin and grind in puree

DRY LOTUS STEM WITH MINT FLAVOUR

A perfect recipe which taste awesome with parathe or naan

INGREDIENTS :-

5 to 6 lotus stem ( peeled and sliced into 1 inches pieces )
4 onions ( finely chopped )
2 tomatoes ( finely chopped )
2 tbsp  fresh mint leaves (finely chopped
2 tbsp ginger garlic paste
2 tbsp curd
1 tsp turmeric powder
1 tbsp red chilly powder
1 tbsp coriander powder
1 tsp garam masala powder
oil


Take a pressure cooker put in it sliced lotus stems with 2 cups water and 1/2 cup milk and make 1 whistle
By this procedure lotus stem will be cleaned from inside
Take a pressure cooker put 4 tbsp oil then put onion in it
After the onions are golden brown put ginger garlic paste
After stirring for about 2 min put chopped tomatoes
When the tomatoes are tender put all the dry masala
When masala are finely cooked and the tomatoes becomes totally tender put curd in it
Then put lotus stems in it and cook it by stirring it for about 7 to 8 minutes to enhance the taste
Lastly add mint leaves
Then put 2 cups water and cook it
Give it 2 whistles and keep it on simmer gas for about 5 min
Lastly garnish it with fresh coriander


Please Note :-
If u don't like mint flavour then avoid mint from this recipe

ANGOORI   RASMALAI

An easy and very simple recipe
Ready in few minutes and tasty and soft to eat

INGREDIENTS :-

FOR BALLS

1 Litre cow milk
2 tbsp vinegar
15 to 20 candy sugar ( mishri or misri )
1 cup sugar
2 cups water

FOR MILK

1 litre milk
8 to 10 strands of kesar
2 green cardamom ( powder)
1 cup sugar


Boil the cow milk and add vinegar to it ( i 2 tbsp vinegar add 1/2 cup water )
Strain the chenna and wash under running water
Let the water drain from the strainer for 10 minutes
Then grind the chenna in mixer grinder
And then make small balls of it . In each ball put the one candy sugar (mishri) in between
Take the pressure cooker add 1 cup sugar and 2 cups water and let the sugar dissolve on high flame
As soon as the sugar dissolve put the balls in it and allow to have 1 whistle
Switch off the gas and open the cooker
Press the balls lightly and put them in the milk

FOR MILK :-

Boil the one litre milk till its half the quantity
Add kesar strands
And lastly add the balls

Angoori rasmalai is ready to serve
SERVE CHILLED

POTATO BEET LOAF

A crunchy and tasty party snacks loved by all

INGREDIENTS :-

3 to 4 boiled potatoes
1 small beet ( grated )
1 tsp ginger garlic paste
2 tbsp bread crumbs
2 tbsp cornflower powder
3 to 4 tbsp corn flacks ( roughly grinder in mixer )
2 tbsp green chilly paste
2 tbsp finely chopped green coriander
1 tsp cumin powder
Salt
2 cubes cheese

I had used cheddar cheese u can use mozrella cheese too

METHOD :-

Mix all the ingredients except corn flacks
Take a small portion in hand
Put a piece of cheese in between and roll it like cylinder or round (any shape u want )
Coat it corn flacks and deep fry or shallow fry
Serve with chutney or sauce

ATTA LADOO 

Doctors suggest that we should eat 1 or 2 spn ghee in our daily life so why not start our day with these delish ladoos which our healthy and tasty too 


INGREDIENTS :-

2 cups atta ( wheat flour )
1 cup + 2 tbsp ghee ( pure )  ( the 2 tbsp is optional )
1/2 cup finely chopped dryfruits 
2 tbsp poppy seeds (khus khus)
2 cardamom ( powder)
1 cup powdered sugar 

METHOD :-

Take a pan and put 1 cup ghee in the pan and put cardamom powder 
Add wheat flour and start roasting it on low flame 
When it changes it colour add poppy seeds and dryfruits 
Roast it when u feel the colour is on its mark 
Then in the last add powdered sugar and within 1 min switch off the gas
when cool down and then make the ladoo 
If the mixture becomes too dry add the left 2 tbsp gheen and then start binding into small balls

CHOCOLATE MODAK

I bet no can resist without eating them and they are very easy to make

INGREDIENTS :-

1/4 cup milk
1/4 cup condensed milk ( milkmaid)
Dark chocolate compound or chocochips 1 cup
2 cups marie biscuit (powdered)
Dry fruits ( optional)


METHOD :-

Take a non stick pan
Add condensed milk and milk
Stir for a min and add chocolate in it
Stir till the chocolate is fully melt
Then add powdered marie biscuit and mix it till the mixture leaves it sides and it becomes like a soft dough
Take the modak mold and make tiny sweet chocolate modak

P.N -
If the batter is unable to leave its sided add more powdered marie biscuit

                                             OR

If the batter is too tough add a little condensed milk and milk

SONDESH 

A famous sweet of KOLKATTA  which is loved by all 
Its teture is sweet soft just melt in mouth and easy to make 

INGREDIENTS :-

1 litre full fat milk 
1/4 cup powdered sugar 
5 to 6 strands of kesar 
8  to 10 pistachio 
1 lemon juice 

METHOD :-

Boil the milk and keep aside for 2 min 
Add lemon juice , after adding the milk curdles 
Strain the curdled milk in a muslin cloth , wash it in running water and hang it for 15 to 20 min
 Mash the chenna with ur palms and make it as smooth as possible 
Mash it for about 5 to 6 min 
Take a non stick pan and add mashed chenna in it then add powdered sugar 
On low flame stir the mixture constantly until it become a little dry 
It will take about 6 to 7 min 
Don't overcook 
Take it out from the pan and make small ball and press a little 
Press it middle and add pistachio on the middle

NARIYAL LADOO

These 10 days are full of sweets at my home
Daily i make some sweet for my bappa

Nariyal ladoo which jst melt in mouth and ready in 7 to 8 min

Ingredients :-

1 cup condensed milk
1 1/2  cup grated coconut ( i used a packet from market )
1/2 cup grated coconut ( for coating )
Finely chopped dryfruits

METHOD :-

Take a non stick pan
Add condensed milk
When the condensed milk is heated and little bubbles arise add coconut in it
Mix the coconut well and cook it till it leaves it sides and start leaving the non stick pan
Let cool down the mixture and then add dry fruits
Take the extra coconut in a plate
Make small balls and coat it in the coconut mixture
Ready to serve

GANPATI  Bappa arrived at home
Time to make sweets for my bappa

First sweet is MAVA MODAK


Ingredients :-

2 cups mava
3/4 cup powdered sugar ( u can add more sugar if u want to make it more sweet)
1 tsp milk
1 tsp cardamom powder
4 to 5 strands of kesar


METHOD :-

Take a non stick pan
Put mava , stir till the mava melts and starts to leave its oil then add cardamom powder
 Cook for another 5 minutes
Add milk in which kesar is dissolved
Cook till the milk is fully absorbed
Take it off from gas
Let it cool for 2 minutes then add powdered sugar
Let it cool completely

Take modak making utensil and make modak of this mava

A PERFECT GOODIES FOR KIDS WHO HAVE SWEET TOOTH

DATES LADOO

Ingredients :-

1 cup seedless dates
1/2 cup grated coconut
1/2 cup finely chopped dryfruits
1 tbsp ghee

METHOD :-

Grind the dates in a mixer grinder .
In a pan take  ghee put the grinded dates into it and make it firm by heating it for 5 min
Take the pan down from gas and mix
 coconut ( grated ) and dryfruits
Make small balls and coat it with finely chopped dryfruits

2 MIN EGGLESS BROWNIE

Oh god i cant believe that we can make delicious brownie in jst 2  min
Now my kids can enjoy brownie any time otherwise i have to make special preparation for making brownie
It can be enjoyed with ice cream
Thnks to my friend who passed on this recipe to me


INGREDIENTS :-

1/2 cup all purpose flour ( maida )
1/2 cup brown sugar ( if u don't have brown sugar take 1/4 cup powdered sugar )
1/4 cup butter ( melted )
1/2 cup milk
1/4 cup cocoa powder
Little choco chips for topping

My microwave proof cup is of 300 ml .
U can adjust the above ingredients according to ur cup size
For ex - if ur cup is of 150 ml, half the above ingredients


Take cup add sugar, cocoa powder and butter in it
Mix well
Then add all purpose flour and mix
Then add milk and mix well for a min
Then put the cup in microwave and keep it for 1 min at microwave high first and for 30  sec second time
If the brownie still looks wet keep for 30 sec more and add chcochips on the top
The choco chips form a shining glaze on top when added in the last

                   My brownie took 2 min but if u don't get ur brownie done in 2 min pls keep it for another 1 min or 2
