GARLIC NAAN ( ON TAVA)

The Naan originates from India but is today eaten in most types of South Asian restaurants and homes around the globe. It has transformed from a basic form of bread for many to experimental creations by chefs and food enthusiasts today with different fillings and flavours.

INGREDIENTS :-

1 cup wheat flour 
1 cup all purpose flour 
1 and 1/2 tbsp garlic paste 
2 tbsp butter 
4 tbsp curd 
1/2 cup milk 
1/2 tsp baking powder 
1/2 tsp baking soda 
2 tbsp fresh coriander chopped finely 
salt 
all purpose flour for dusting 

METHOD :-

Leaving 1/2 tsp garlic and butter mix all the other ingredients and make a soft dough and keep it for rest for 1 hour 
Mix the butter and garlic ( left over ) 
Now take a small portion of dough,dust it with all purpose flour  and roll it in the shape of naan with the help of rolling pin 
With the help of water wet one side of the naan 
Take a normal tava and put the wet side on it 
When little bubbles appear on it 
as shown below 

Turn the pan upside down as shown below 




let it cook on simmer gas 
About after 1 min its fully cooked 
Take it on and apply butter and garlic combination on it 
SERVE HOT

CHOCOCHIPS CHOCOLATE MUFFINS

My children loves this muffin for school as they are super moist and have lots of chocochips in it
I  don't do frosting on it because the lunch box gets sticky therefore they like it plain n simple


INGREDIENTS :-

1 1/2 cup all purpose flour
1 cup powdered sugar
1 cup milk powder
3/4 cup white butter
1/2 cup chocolate powder
1 tsp vanilla essence
1 tsp baking soda
1 tsp baking powder
1/2  milk
1/2 cup chocochips
muffin covers
baking cup cakes tray

METHOD :-

Mix all purpose flour,baking soda,baking powder and cocoa powder well with a wire whisker
Mix the rest of the ingredients finely, make sure their are no lumps in it
In the end mix chocochips in it
Now mix both the mixture well and put it in the muffin cover one by one
Fill the muffin cover half as they don't come out of the cover.
Preheat the oven at 180 degree and bake the muffins for 20 min

MUGHLAI PANEER

Paneer is the most common type of cheese used in traditional Indian and Pakistani cuisines. The use of paneer is more common in India, Nepal, Bangladesh and Pakistan. It is sometimes wrapped in dough and deep-fried or served with either spinach (palak paneer) or peas (mattar paneer).
But today i m posting another rich recipe using paneer which is mughlai paneer 

Basically some people make this dish by using khoya but my recipe doesn't consist khoya 
Hope u all will love this recipe 

INGREDIENTS :-
250 gms paneer 
3 onions 
3 tomatoes
2 green chilly 
10 to 15 cashew 
2 tbsp poppy seeds ( khus-khus )
8 to 10 garlic pods 
1/2 cup milk 
1 small piece ginger 
1 cup curd 
 1/2 cup fresh cream or malai 
2 tsp red chilly powder
1/2 tsp cumin seeds 
1 tsp turmeric 
2 tsp coriander powder 
1 tsp garam masala
1 tbsp sugar 
1 cup water 
salt 
2 tbsp fresh coriander 

METHOD :-
Soak cashew and popper seeds in 1/2 cup milk for 1/2 an hour 
After half an hour grind it into smooth paste 
Take a mixer grinder put in it onion, ginger ,green chilly and garlic make a fine paste 
Take oil in a pan put cumin seeds   
Put the onion paste into the pan and fry on medium till golden brown 
Put all the dry spices and add cashew paste into it 
 Fry for 2 min 
Then add tomato puree and fry till the oil appears at the sides 
Add curd slowly and mix till the curd doesn't dissolves completely in the mixture 
Add sugar and cream into it 
Add paneer cubes and 1 cup of water along 
If want to make more rich recipe u can add milk instead of water 
I used both water and milk 
Add garam masala 
let the gravy cook on simmer gas for 5 min 
Garnish with fresh coriander

PANEER NUGGETS

Paneer recipes are basically popular in north india. Varieties of snacks and curry can be made using paneer. Agreat subsitute of chicken nuggets is paneer nuggets. Perfect for non vegetarian is paneer nuggets crispy and tasty


INGREDIENTS :-


100 gm paneer ( cottage cheese )

FOR BATTER :-

1/2 cup all purpose flour ( maida )
2 tbsp chilly flakes
2 tbsp oregano
1 tsp ginger garlic paste
1 tsp garlic powder ( optional )
1/2 cup water
salt


FOR COATING :-

1 cup breadcrumbs
1 tsp red chilly powder
salt

Take paneer cut into long 1/2 inch fingers
Sprinkle little salt, oregano   on paneer
Make the batter by mixing all the ingredients
The batter must be as the consistency of pakora  ( gram flour mixture )
In a plate place bread crumbs and add red chilly powder and salt in it
Take the paneer one by one
Dip in the batter roll it with the bread crumbs mixture and fry

Serve with sauce or cheese dips

P.N :-  I made fresh bread crumbs at home by taking fresh bread and grind it mixture grinder

INSTANT JALEBI

Jalebi, also known as Zulbia, is a sweet popular in countries of South Asia, the West Asia, North Africa. It is made by deep-frying a all purpose flour batter in pretzel or circular shapes, which are then soaked in sugar syrup.
First the experts use to keep the batter overnight to enhance its taste of till tangy flavour 
But trying this instant jalebi we don't compromise in its taste 


INGREDIENTS :-

1 cup all purpose flour ( maida )
1/3 cup curd ( 1/3 means about 3 to 4 tbsp )
1 tsp cardamom powder 
1 tsp baking powder 
1/2 tsp orange colour 
1/2 to 3/4 cup water 

FOR SUGAR SYRUP:-

1 cup sugar 
3/4 cup water 
6 to 8 strands of kesar 
1/2 tsp rose water 
If u don't have rose water u can use cardamom 


METHOD :-

FOR SUGAR SYRUP 

Mix all the ingredients and boil it on medium flame about 5 to 6 min unless u can create one wire in between ur fingers ( ek taar ki chachni )
keep aside 

FOR JALEBI ;-

Sieve baking powder and all purpose flour with the hep of siever
Add all the remaining ingredients one by one 
Mix properly but make sure there are no lumps in the batter 
The batter should be thick 

Take a utensil used for making jalebi or u can take a icing bag with nozzle having small mouth or u can also take a hand made piping bag of polythene 
Make sure the mouth of the piping bag must be small 
Fill the batter in the piping bag
Take a flat bottom vessel
Fill oil ( mostly it is preferable to use desi ghee but it is upto your wish )
Now slowly make round shape in th oil
Fry on a medium flame till it is crispy
Immediately put it into sugar syrup
Take out in 2 min
Garnish with silver work or dry fruits

P.N:- If putting  the batter in oil it flitters ur batter is thin. Make it thick by adding  all purpose flour

MALAI KOFTA

When u are in hurry and also want to make a rich recipe in ur lunch and dinner so here is MALAI KOFTA . A rich recipe in jst 10 min
Do make this and let me know how was the taste


INGREDIENTS :-

FOR KOFTA

3 boiled and mashed potatoes
1 cup grated cottage cheese ( paneer )
2 tbsp fresh cream ( malai )
1 green chilly ( finely chopped )
1 tsp garam masala
1 tsp red chilly powder
1 tsp cumin powder
2 tbsp fresh coriander
2 tbsp cornflour
salt

FOR GRAVY :

2 onions
8 to 10  of garlic
1 small piece ginger
2 green chillies
10 to 12 cashew nuts
3 tomatoes
1 tsp  red chilly powder
1 and 1/2 tsp coriander powder
1 tsp garam masala powder
1 small piece cinnamon
1 bay leaf
1tsp cumin seeds
2 to 3 cloves
1 tsp sugar  
3 to 4 tbsp fresh cream
2 tsp kasuri methi
2 tbsp oil

METHOD :-

Mix all the ingredients of kofta
Make small balls and fry it
Take onions,cashew nuts, ginger ,garlic and green chillies and grind it in mixer grinder
Take oil in a pan
Put cloves, cinnamon, bay leaf in oil
Then put onion mixture
After the onion is light golden
Add all the dry spices and saute for 2 min
Add tomatoes ( grinder in mixture grinder to make puree )
Put kasuri methi
When the oil is separated add 2 cups water
Add fresh cream
And lastly add fresh cream and put the balls in it
Simmer for 2 min
Garnish with fresh cream
Serve hot

POTATO NEST

A nest made of potato. An impressive snack to impress your guest or kitty party friends. Its crispy and tasty. You can do the filling of your choice


INGREDIENTS :-

2 potatoes grated
2 tbsp cornflour
oil for frying

FILLING :-

1 cup sprouts
1/2 tsp red chilly powder
1/2 tsp dry mango powder
1 cup curd
1/2 tsp red chilly powder
1/2 tsp cumin powder
salt


METHOD :-

Grate the potato in water
Take out the grated potatoes from 2 or 3 running waters
Then squeeze the grated potatoes and take the water as much as possible
Then sprinkle cornflour on the grated potatoes
Take the steel tea strainer and and place a handful of grated potatoes on it as shown below
 Then take a round steel spoon and place it on top as shown below



Then in this position fry it in hot oil by holding in hands



The nest is ready
Take out from the strainer once its cooled down

Filling :-

Take sprouts in pan and add red chilly powder and dry mango powder and mix it well
Place 2 tbsp sprouts on the nest
Mix curd well with salt in it
Place the curd on it
Sprinkle cumin powder and red chilly powder on it
Spread fresh coriander leaves on it
